Recipe For Holly Bell's Tropical Breakfast Bars

A few weeks ago I was invited to a blogger baking event that was hosted by Great British Bake Off finalist Holly Bell. I must admit I haven't seen the Bake Off before (even though the nation is obsessed) but Holly was such a doll, telling us entertaining stories and of course sharing her delicious recipes. The event was put on by Whitworths who i'm sure you've all heard of or seen in your local supermarket. This recipe was specially created for them by Holly - all the details are below:

WHAT YOU'LL NEED

(makes 10 bars)

150g Whitworths deglet dates
20g Whitworths desiccated coconut
95g Whitworths soft figs
30g Whitworths mango
30g Whitworths pineapple
70ml boiling water
160g oats
1 ripe banana

Preheat your oven to 160°C/ Fan 140°C/ Gas Mark 3, pop the kettle on, then lightly grease and line a 20cm square tin.

Peel the banana and break into pieces then place in a jig with dates, coconut and boiling water. Leave for 5 minutes but meanwhile chop figs, mango and pineapple into small chunks. (Tip: use scissors its easier)

Using a stick blender blitz the banana mixture to a pine puree, being careful not to spray yourself with the boiling water.

Mix the puree, oats and chopped fruit in a bowl then press into prepared tin.

Bake for 30 minutes until the edges are starting to brown and top feels firm to touch.

Remove from the tin then cool on wire rack. Cut with a sharp knife and serve.

Store in a tin for up to 5 days. These bars freeze well too simply wrap well then freeze up to 1 month - defrost at room temperature.

These tropical bars are honestly a treat. The natural sugars from the fruit make it perfectly sweet and healthy. Holly said that these tropical bars go down a treat with her kids. But for me personally - these are great when you don't have time for breakfast or when you need a healthy snack. Overall it was a great day and it was really nice getting to meet other bloggers.
